Pancakes with caramelized banana!!! What can be a better substitute for breakfast than a stack of fluffy, light, and soft egg-less pancakes with honey pouring down the sides? I love pancakes, and I actually blurt out the word “YUM” whenever I eat them. Usually, because I like to eat the simple way; with fruits, butter and honey. You can absolutely make pancakes without eggs! And they can be just as fluffy and delicious.
It’s perfectly delicious like that, but if you’re willing to go the extra mile to make something a bit fancier with your eggless pancakes, believe me, you will be mind-blown. A stack of fluffy, delicious pancakes that your family will love to have.

Steps to make Pancakes with Caramelized Banana
In a mixing bowl first, take 1+1/2 cups of maida or all-purpose flour. Add 1 pinch salt. Skip adding salt if using salted butter. Add 3/4 cup of powdered sugar. You may adjust the sugar quantity as per taste and requirement. Add 1 teaspoon baking powder. Add 1/2 teaspoon baking soda. You can even add ¼ teaspoon vanilla essence or ½ teaspoon vanilla extract. Add melted butter as well. With a wired whisk mix all the dry ingredients very well. Add a cup of milk gradually to form a pancake batter and whisk until a thick & silky smooth without lumps. The pancake batter is of pourable consistency.
Now heat up a pan on the medium flame. Grease it with little butter and remove the excess butter with a tissue paper. Pour a spoonful of batter on the pan and cook for one minute (some bubbles will appear on the top). Cover the pan with a lid and cook for one minute. It doesn't take much time to be ready. After a minute, flip it over with a spatula and cook the other side. Cook both sides until golden brown. Repeat the same until the batter is over.
Take another pan. Put sugar granules and melt it on low flame, as soon as it melts and gets caramelized add chopped banana slices to it.

This batter should be thick but still scoopable. You can add a little whole milk at a time to reach just the right consistency. Don’t overmix. Overmixing can result in dense pancakes. Flip when the time is right. For perfectly cooked pancakes, be patient with fipping. Don’t press down on the pancakes while cooking. Pressing down on your pancakes with a spatula can press out the air bubbles inside, resulting in denser pancakes.
