Sweet Boondi is a super easy and quick-to-make dessert recipe. Boondi are tiny sweet, crispy deep-fried round balls made of gram flour (besan) and dipped in sugar syrup.
They are often offered as prasada (offering) in temples in India. They are also prepared during festivals as well.
The batter, which is made of besan is passed through a ladle with holes. As the batter drops through the ladle into the hot oil, it forms a round shape. The size of the boondi will depend on the size of the holes in the ladle. These are fried and then taken out of hot oil and then dipped in sugar syrup.

Steps to make Sweet Boondi
To prepare Sweet Boondi/Meethi Boondi Recipe, take 1 cup of gram flour/besan in a sifter and sieve it. In a Mixing bowl, mix gram flour with water. Whisk to prepare a smooth lump-free batter. The batter should be a little thick, a bit thinner than normal bajji batter. Add baking soda and one pinch of food-grade orange color. Mix them properly. Then add 1 tablespoon of oil to the batter. It will make the boondi crisp. The batter is ready. Keep aside.
Now heat oil for deep frying. Any type of cooking oil can be used to make boondi. The boondi taste best If we fry them in desi ghee. Oil should be moderately hot. To test, drop a pea size batter in the oil, batter should rise immediately without changing color which means oil is ready for frying boondis. Now heat ghee in a pan over medium flame, hold a perforated spoon a little above the hot ghee and pour some gram flour batter on the spoon. Allow small droplets to fall in the ghee by tapping the edge of the spoon lightly. Stir and deep fry the boondis in the ghee gently and fry till crisp but not brown. Take out the boondi on a clean kitchen towel or paper towel to drain off the excess oil. Repeat the process with the rest of the batter.
Then prepare sugar syrup with 1 cup sugar & 1 cup water of thick consistency by bringing it to boil. It will take around 5-8 minutes to prepare the desired sugar syrup. Add in cardamom powder, mix well to make syrup. Add 1 pinch of food-grade yellow colour to the sugar syrup as well to enhance the look of boondi.
Add the fried yellow and orange boondis into the syrup. Gently toss them and mix till boondis are well coated in sugar syrup. Let this set for 4-5 hours until the sugar syrup is completely absorbed by the Boondi.
