Take a pan and roast 1/4 cup of raw peanuts over a low flame. This process will take 5-7 minutes.
Take 1 teaspoon of cooking oil. roast 10-12 cloves of garlic until golden. Add 2 table spoon of desiccated coconut and 2 tablespoon of white sesame seeds. roast them for few seconds. And then remove them from the pan.
Roast coriander seeds and cumin seeds over a low flame.
Now add everything in the same pan and add salt and red chilly powder.
Grind them altogether to prepare authentic powdered garlic chutney to be served with vada pav pakora which is the heart and soul of the recipe.
Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. When they start to splutter, add chopped green chili, ginger-garlic paste, and curry leaves. Sauté for a minute.
Mash the boiled potatoes in a large bowl. Stir in the mashed potatoes and cook, stirring occasionally, for a few minutes. Add cilantro and lemon juice. Mix thoroughly and let it cool.
Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
In a mixing bowl, combine besan, rice flour, turmeric powder, red chili powder, baking soda, and salt.
Gradually add water, whisking continuously, until you achieve a thick, smooth batter that will coat the bread well.
Cut the edges of bread and flatten each slice with the help of rolling pin.
Spread a generous amount of dry chutney and the potato filling onto one slice of bread.
Roll the bread in cylindrical shape.
Repeat the step and prepare all the bread pakoras.
Dip each bread sandwich into the batter, ensuring it is well-coated.
Heat oil in a deep pan over medium heat for frying. Carefully place the battered bread into the hot oil. Fry until golden brown and crispy on all sides, turning occasionally to ensure even cooking. Remove from oil and drain on paper towels.
